hello.

since i have been posting on communities i have had people adding my journal to their friends list. though i am extremely flattered that you may think my ramblings are remotely interesting, me thinks you may be here only for the food. so i have spring cleaned my friends list and if you are still interested in my foodie posts you can find them on here [info]ohfood, minus the drama.

you lucky things. because i am house bound and extremely bored (and rather hungry), here are some (other) things i have baked this month.

lemon sugar cookies. just how i like my cookies, chewy with a melt-in-your-mouth texture. absolute crowd pleaser.

vanilla and chocolate cupcakes with pink and white swirl. this was a cupcake order for (wait for it!) my friends sisters boyfriends mum. haha

pandan cake. this was a better shot than the one after i prised the cake out of the tin. very moist and very fragrant. this was a winner with the family and was inhaled in minutes!

blueberry twice baked cheesecake. HEAVENLY! i seriously almost ate the whole thing by myself! bursting blueberries embedded in the cheesecake, well balanced flavour with the vanilla and lemon coming through and a perfect base.

it was my friends daughters 2nd birthday 2 weeks ago and she asked for 40 cupcakes. i obliged. gave her a bargain of a price and came up with these hello kitty theme cupcakes.

i was going to make the hello kitties out of rolled marshmellow fondant, so you can imagine my delight when i spotted hello kitty mallows in topshop, of all places!! yay! less work for me!

i had a LOT of cream left over from baking jen's cake yesterday so i browsed on the internet for a recipe so that i could use it up. following a conversation about choux pastry with jen yesterday night, it prompted me to try to make profiteroles. pastry always scares me because it looks so difficult to get right, but with jens confidence in me i tried them out today.

the choux was lovely and light and perfect against the cool cream which came gushing out as i bit into it all the while merging with the wonderfully sinful sweet dark chocolate. together causing all sorts of pleasure...

Last Nights Dinner Party

last night was a blast. i was a little worried about the duck jus, but after fiddling around it turned out quite well. the duck was cooked to perfection (med rare) and though i had a bit of a falling out with the outcome of the chocolate fondant, there was nothing like a sprinkle of icing sugar to cover correct the mistake. good times indeed.

i have just finished making 24 cupcakes. paul had asked me to make some for lucy's birthday, he also insisted he would pay me on a 'business' level but you know, im just gonna give it to lucy has a part of her present.

on the talk of birthday parties, jessica's is in two weeks time. already i have bought the loot for the goody bags and filled them. i have made the weights for the 6 bunches of helium balloons. i have made several meters of party chains. bought most stuff apart from the food. ordered her cake (8 pounds in weight and 70 bucks of outta my purse) bought mine and jessies costumes... drawn up a layout plan for the hall... complied a playlist for the DJ...

...

what can i say? preparation is the KEY.

so last night was a absolute success. the wine was flowing. the food turned out great and the conversation didnt stop until they left my house past midnight.

i really enjoyed myself, and though it all costs me £XXX.00... (hugely because of the different wine for each course) it was all worth it.

live street entertainment while we ate our dinner sat on a kerb on the cobbled street of covent garden. (this dude swallowed the whole balloon down his throat. not something you wanna be watching while eating food. esp when you have a dirty mind like i do)

all this refraining from shopping has left me with the shakes. i have been replacing shopping with fried chicken. even more reason for my t-shirt to arrive, so i can wear it and eat chicken while watching big brother.

Going Bananas

Banoffee Pie

base

250g digestive biscuits
100g butter, melted

dulce de leche

150g butter
397g condensed milk
150g dark brown sugar

3 small bananas
284ml carton of whipping cream
chocolate shavings
cocoa powder

blitz the biscuits into fine crumbs and combine the melted butter

grease a springform cake tin and using the back of an spoon, press the mixture into the base and sides of the tin. chill in the fridge for 20 mins.

make the dulce de leche (caramel) by placing the butter and sugar into a non stick pan and stir on medium heat until the butter melts and the sugar dissolves. add the condensed milk, stirring continuously. remove from heat as soon as it comes to the boil.

spoon evenly on the biscuit base and set aside. mash the bananas and spread over the caramel (leave some slices for decoration)

whip the cream and spread over the mashed bananas. decorate with chocolate shavings and cocoa powder.

i have kinda ditched baking cupcakes in replacement i have been baking cookies. and lots of them. forget therapy, im more relaxed and serene when cooking. not only do i find it extremely therapeutic, but i get to also eat the end result! i am NEVER going to lose weight anytime soon.
